Crockpot Chicken Taco Soup

SOUP OF THE WEEK: Crockpot Chicken Taco Soup

So…I really wanted to make French Onion Soup this week but it just didn’t happen. I was craving taco soup instead. Below is a very easy recipe – all you have to do is throw all of the ingredients into the Crockpot and walk away! Easy peasy!

I served it with some tortilla chips and homemade guacamole. Hooray for Taco (Soup) Tuesday! Olé!

Ingredients:

Trader Joe’s Diced Tomatoes and Chilies, 1 can

Chicken Broth, 3 cups cups

Empire Kosher Boneless Chicken Breast, 1 package

Trader Joe’s Frozen Roasted Corn, 1 cup

Yellow Bell Pepper, 1, sliced and diced

Ortega Taco Sauce, 1 cup

Sea Salt

Fresh Ground Pepper

Chili Powder, 1 teaspoon

Directions:

  1. Place all of the ingredients into the Crockpot.
  2. Cook on low for four (4) hours.
  3. Remove the chicken from the Crockpot and use two forks to shred on a cutting board
  4. Place the shredded chicken back into the Crockpot and cook on low for an additional thirty (30) minutes.
  5. Serve!
