GET DRESSED: Lemon Vinaigrette

I am a lover of all things CITRUS. Oranges, lemons, limes are all in my wheelhouse. When I dress a salad I want a pop of acid! For our weekly ladies Bachelor viewing I cooked up some Skillet Roasted Garlic Chicken with Herbs of Provence and a side salad. My salad included many of my favorite things: artichoke hearts, toasted pumpkin seeds, sliced marinated green olives, diced green apple and sliced hearts of palm. I needed a dressing to bring it all together. I made a simple lemon vinaigrette pretty quickly and it married everything nicely!

Ingredients:

Lemon, juice of 1

Apple Cider Vinegar, 1/4 cup

Garlic Powder, 1/2 teaspoon

Sea Salt, to taste

Fresh Ground Pepper, to taste

Extra Virgin Olive Oil, 1/2 cup

Directions:

  1. Juice the lemon into a small bowl. Add the apple cider vinegar, sea salt, pepper, and garlic powder.
  2. Drizzle the olive oil into the bowl slowly while whisking everything together until combined. Taste for seasoning and add more if needed.
  3. Once fully combined I pour the dressing into my Chef’n ® Emulstir ™ Salad Dressing Mixer and serve. The dressing keeps for much longer and there is a mixer within it!
