HAPPY CINCO DE MAYO!
I don’t know about you but I will be celebrating with a Corona and lime in hand and cheesy quesadillas with salsa and fresh guacamole. Avocados are one of my favorite things to eat. I buy at least two at the market every week! As a result we eat A LOT of guacamole (on top of egg sandwiches, toast, quesadillas, or just right out of the bowl).
My go to recipe is super easy and requires very few ingredients. Hope you enjoy it as much as we do!
Avocado, 1-2, pitted and diced
Fresh Ground Pepper
Extra Virgin Olive Oil (“EVOO”)
- Mash the avocado in a bowl with a potato masher. I have this one from Crate and Barrel and love it.
- Add the seasonings and EVOO.
- Mix together with a spoon until combined.
- Serve immediately!
Spices + Avocado + EVOO = HEAVEN
