CHEESY: Fake Meat Taco Tuesday with Old El Paso

Taco Tuesday is a BIG deal at our house. We love us some tacos! So much so that Nathan may or may not have this romper with little tacos printed all over it… I am so excited for him to fit in it!!

We also really love cheese. Leave a block of cheese with E and you will be lucky if there is any left when you get back. When I meal plan properly, we try to celebrate Taco Tuesday every week. Normally my tacos consist of ground tukey or ground chicken. Unfortunately though, because I keep Kosher, I cannot mix meat and milk together, so I cannot have cheese on my meat tacos. Yes…that means I have never had a cheeseburger. A few years ago I discovered fake (vegetarian) ground meat and it was life changing. We have been using it ever since to make fake meat tacos on Taco Tuesday. And we have been cheesing them up! They are delicious and make for a very hearty dinner.

We typically use hard taco shells but they usually break apart as soon as you take a bite. When Old El Paso reached out about their Soft Tortilla Taco Boats I was intrigued. A soft taco shell that can safely hold more filling, without making a mess?! I was all about it. This past weekend, I made fake meat tacos in the Soft Tortilla Taco Boats for lunch one day and they were a HUGE hit! We didn’t even miss the crunch of a hard taco!

TACO TUESDAY RECIPE

Ingredients:

Fake Meat, one package (I use the Trader Joe’s one), chopped

Tomato Sauce, 1/2 cup

Onion, 1, diced

Arugula, 1/2 cup

Garlic, 2 cloves, chopped finely

Mini Tomatoes, 10, sliced on half

Sea Salt, 1 teaspoon

Fresh Ground Pepper, 1 teaspoon

Extra Virgin Olive Oil (“EVOO”), 2 tablespoons

Mozzarella Cheese, grated, 1/4 cup

All of the Fixings: Mozzarella Cheese, Salsa, Guacamole

Directions:

  1. Heat a large skillet on the stove on medium. Drizzle in two tablespoons of EVOO.
  2. Add the onions to the skillet. Sauté until they are translucent.
  3. Add the garlic to the skillet and sauté for one minute.
  4. Season with sea salt and pepper.
  5. Add the halved tomatoes to the skillet. Sauté for 2 minutes, or until the tomatoes start to soften.
  6. Add the fake meat to the skillet. Sauté for 2-3 minutes or until it is warmed through.
  7. Then all the tomato sauce to the skillet.
  8. Lastly, add the arugula and mozzarella cheese to the skillet. Stir everything to combine.
  9. Serve immediately in your favorite taco shell. Top with your favorite fixings. I topped our tacos with more cheese, salsa and guacamole!
