Sausage and peppers. A classic combination. I put a twist on the classic by adding some diced apple and red onion. Dare I say, I think this twist is better then the original! Not the prettiest dish but definitely the tastiest!
Ingredients:
Kosher Chicken Sausage, 2, sliced in half and then diced
Apples, 2, peeled, cored and diced
Green Pepper, 1 large, de-seeded and diced
Red Onion, half, diced
Coconut Oil, 2 tablespoons
White Cooking Wine, 2 tablespoons to deglaze the pan
Directions:
- Melt 1 tablespoon of coconut oil in a skillet. Saute the sausage until browned. Set aside.
- At the same time, melt 1 tablespoon of coconut oil in your Le Creuset Dutch Oven. Saute red onion, peppers and apples until desired tenderness.
- Deglaze the sausage skillet with white cooking wine. Scrape the bottom of the skillet to pick up all of the sausage goodness. Pour this sauce over the apples, peppers and onions.
- Add the sausage to the Le Creuset Dutch Oven. Allow the flavors to marry.
- Serve while hot.
