One of my close friends came in from NYC to visit me in New Jersey this weekend. She is a city girl through and through and doesn’t typically like hanging out in the suburbs but made an exception for me.
To commemorate the occasion we had a lady day! We started with a baking activity in the morning, next we had lunch at Arturo’s in Maplewood, followed by picking up some Oscar cookies at The Able Baker (newly expanded and everything) and a eating a whoopie pie at Palmer’s Sweetery and Cafe (a new bakery and cafe in Maplewood), and finished the day with ceramic painting at Color Me Mine in Summit. All of our favorite things. It was a glorious day!
Before my friends arrival, I was trying to decide what we should bake together. Then I noticed that I had some cocoa powder in the pantry and zucchini in the fridge. Why not try baking some chocolate zucchini bread?! While scouring the internet for recipe inspiration I came upon Sally’s Baking Addiction’s Double Chocolate Zucchini Bread. The recipe looked easy enough and didn’t require anything I didn’t already have in the house. I also really liked that Greek yogurt was an ingredient (I used 0% Fage Yogurt).
We gave it a try (sans frosting)….and the results were DELICIOUS! The bread was rich and moist. It didn’t taste like you were eating a mouthful of vegetables. We snacked on it when we got back from Color Me Mine. I sent half of the finished product to NYC along with my friend. Our half didn’t last the weekend!
It is the perfect compliment to my morning coffee or a great mid-afternoon snack!
