Hey! It has been a while!
Life has been busy over the last year and as a result I have taken a step back from blogging. I don’t know that I can commit to post every week, but when I have something interesting to share, I will definitely be sharing here. I actually have a few fun things to share over the next few weeks!
I thought it was fitting that my first blog post back after my almost year long hiatus is a recipe. This recipe was one of my favorite creations of the summer. And it came together completely by accident! I had bought some broccolini intending to roast it, like I always had previously. We were having some friends over for a BBQ and I ran out of time to roast it, so I threw it on the grill with everything else. It was a big hit at the BBQ!
It has since become one of my most requested dishes by friends. The spicy olive oil is not overwhelming and can be omitted entirely if spicy is not your thing. It just added a nice little something to the dish and was a nice contrast to the sweet cranberries.
We grill all year long (yes, even in the winter) so this is a great recipe to always have in my back pocket.
Hope you enjoy this recipe as much as we do!
Ingredients:
Broccolini or Baby Broccoli
Extra Virgin Olive Oil (I use this one from Graza! I love the squeeze bottle and it tastes delicious!)
Sea Salt
Fresh Ground Pepper
Garlic Powder
Dried Cranberries, roughly chopped
Marcona Almonds, roughly chopped (I use the Trader Joe’s Rosemary Marcona Almonds, they are addictive on their own)
Spicy Olive Oil, to drizzle on top (I use this one that I bought at Baker Street Market in Maplewood and we love it, but this one from Brightland is supposed to be great too)
Directions:
- Wash and dry your broccolini.
- Cut off the last quarter inch of the broccolini.
- Drizzle the broccolini with EVOO and sprinkle with little sea salt, garlic powder, and fresh ground pepper.
- Grill the broccolini for 2-3 minutes per side, then remove from the grill.
- Place the broccolini on a serving dish.
- Add the dried cranberries and marcona almonds on top of the broccolini and then drizzle with the spicy olive oil.
- Serve and enjoy!
