Herb Roasted Rainbow Carrots

Happy Friday! You made it! Another week is (almost) over.

Are you here looking for an easy vegetable side dish to add to your dinner menu tonight? Well lucky for you I have a new one! These Herb Roasted Rainbow Carrots come together very quickly and are a BIG family favorite in our house. They are totally kid friendly too. Nathan and Nora love to pick them up and eat them with their hands!

Ingredients:

Les Petites Carrots of Many Colors (from Trader Joe’s) or Rainbow Carrots, 1 bag

Extra Virgin Olive Oil (“EVOO”), 2 tablespoons

Rosemary, 1 teaspoon

Thyme, 1 teaspoon

Onion Powder, 1/2 teaspoon

Garlic Powder, , 1/2 teaspoon

Sea Salt, to taste

Directions:

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Cover a sheet pan with parchment paper or aluminum foil.
  3. Drizzle the EVOO into the bag of rainbow carrots. Then add the herbs and sea salt. Shake the bag until all of the rainbow carrots are coated with EVOO and herbs.
  4. Pour the rainbow carrots onto the sheet pan and spread into an even layer.
  5. Roast the rainbow carrots in the oven for 20-25 minutes or until fork tender.
  6. Serve and enjoy!
