Buffalo Roasted Cauliflower

Looking for a quick, easy and (sort of) healthy side dish? Well I have a new one for you! I made this buffalo roasted cauliflower as a side to salmon tacos last week during the big Nor’easter (before our power went out) and it was a big hit!

Who doesn’t love buffalo chicken and roasted cauliflower? Well…no, not together at the same meal. That would be weird. What about combining the flavors of buffalo chicken and roasted cauliflower? WELL THAT IS JUST A MATCH MADE IN HEAVEN! The cauliflower had just a little bit of bite and the buffalo sauce added a nice kick. I will definitely be making this roasted cauliflower again very soon! Maybe even for dinner tonight!

BUFFALO ROASTED CAULIFLOWER

Ingredients:

Cauliflower

Frank’s RedHot Buffalo Sauce

Garlic Powder

Extra Virgin Olive Oil (“EVOO”)

Sea Salt

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Spray your foil lined roasting pan with Pam or drizzle with EVOO.
  3. Spread the cauliflower pieces out onto the pan, making sure everything is in one layer so it can roast evenly.
  4. Drizzle the cauliflower with EVOO and then sprinkle garlic power and sea salt on top.
  5. Drizzle the buffalo sauce over the cauliflower. Be careful not to pour too much sauce onto the cauliflower or it will get soggy.
  6. Roast in the oven for 20-25 minutes, or until fork tender.
  7. Serve immediately!
