Turkey Taco Flatbread

Looking for a quick and easy dinner? Well, I have a really flavorful one for you today!

Last week, I made these Turkey Taco Flatbreads for dinner and they were DELICIOUS! E and I both went back for seconds. And Nathan loved them too! He just ate the turkey plain, without any salsa or taco sauce.

I always keep salsa and taco sauce in my pantry. They are such staples in our house! I wanted to make something quick, easy, and tasty for dinner, and thought that using the sauces and some extra flatbreads that we had in our fridge could cover all of those bases. Some more digging through the fridge revealed ground turkey and a bell pepper, so I decided to add an onion and tomato and get dinner going!

The sweetness of the peppers balanced the light heat of the salsa and tanginess of the taco sauce, and the turkey was moist and turned out to be the perfect complement to the other flavors.

This whole dish took about 20 minutes from prep to serve. Who doesn’t love an easy and quick Taco Tuesday (or any night) recipe? Hope you enjoy it as much as we did!

Ingredients:

Ground Turkey, one package

Bell Pepper, 1 large or three mini, diced

Yellow Onion, 1 large, diced

Garlic, 1 large clove, chopped finely

Tomato, 1 large, chopped

Tomato Paste, 1/2 teaspoon

Sea Salt, to taste

Fresh Ground Pepper, to taste

Garlic Powder, to taste

Smoked Paprika, to taste

Salsa (to spread on the bottom of the flatbread)

Taco Sauce (to drizzle on top of the turkey)

Extra Virgin Olive Oil (“EVOO”)

Directions:

  1. Heat a skillet on medium heat on your stove top. Add 2 tablespoons of EVOO to the skillet.
  2. Once the EVOO is shimmering, add the onion to the skillet. When the onion looks slightly translucent add the tomato paste and bell pepper to the skillet.
  3. Once the bell pepper is slightly soft and the onion is browned a bit, add the garlic to the skillet.
  4. Once the garlic is fragrant, add the ground turkey to the skillet. Season with sea salt, fresh ground pepper, smoked paprika and garlic powder. Then chop it up with your spoon and saute until cooked all the way through.
  5. While the turkey is cooking, warm the flatbreads in the oven for 5 minutes or in the microwave for 10-15 seconds. Then place on a plate and spread out a thin layer of salsa at the bottom of each flatbread.
  6. Once the turkey is done, layer a few scoops of it on top of the salsa.
  7. Drizzle with taco sauce and serve immediately!
