Simple Roasted Chicken Legs with Vegetables

If you are looking for an easy and delicious chicken dish for dinner tonight, well, boy do I have one for you. These Simple Roasted Chicken Legs with Vegetables will knock your socks off!

I make this chicken at least twice a month and, every time I make it, E asks why I don’t make it more often. The chicken has so much flavor and is so juicy. It is such a filling meal, and it isn’t terrible for you either. And it makes the house smell amazing too!

Ingredients:

Chicken Legs, 2

Onion, 1, sliced

Potatoes, 2, sliced

Garlic, 2 cloves, roughly chopped

Sea Salt

Fresh Ground Pepper

Garlic Powder

Smoked Paprika

Rosemary

Dried Parsley

Extra Virgin Olive Oil (“EVOO”), 2-3 tablespoons

Directions:

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Spray your Pyrex with Pam.
  3. Spread the onions, potatoes, and garlic along the bottom of the Pyrex. Drizzle with EVOO and season liberally with sea salt, pepper, garlic powder, smoked paprika, parsley, and rosemary. Mix everything together with your hands to make sure the seasoning is evenly distributed.
  4. Place the chicken legs on top of the vegetables. Rub with EVOO and then season both sides of the chicken with the same spices used on the vegetables.
  5. Cover the Pyrex with foil and roast in the oven for 30 minutes.
  6. After 30 minutes, remove the foil and roast uncovered for an additional 30 minutes or until the chicken is slightly browned.
  7. Serve immediately.
