Banana Berry Muffins

Are you looking for the best breakfast muffin EVER? Well, I have just the recipe for you! These banana berry muffins are jam packed with fruit (bananas, raspberries, AND blueberries), and BOY are they delicious. They basically melt in your mouth. I have been known to eat two in one sitting. AND the kiddos love them too!

Ingredients:

Fleischmann’s Unsalted Margarine, 1 stick, melted

All Purpose Flour, 1-½ cups

Baking Powder, 1 teaspoon

Sea Salt, ½ teaspoon

Baking Soda, 1/4 teaspoon

Ripe Bananas, 2-3, mashed

White Sugar, ½ cup

Brown Sugar, ½ cup

Eggs, 2

Vanilla Extract, 1 teaspoon

Fresh Raspberries, 1/3 cup

Fresh Blueberries, 1/3 cup

Directions:

  1. Heat your oven to 350 degrees Fahrenheit.
  2. Spray your muffin pan with Pam, or use these silicone baking cups.
  3. Whisk the flour, baking powder, sea salt, and baking soda together in a medium-mixing bowl.
  4. In a separate large mixing bowl, mix together the melted margarine, white sugar, and brown sugar until creamy.
  5. Slowly add the eggs, vanilla, and mashed bananas.
  6. Add the flour mixture to the large bowl and mix just until combined.
  7. Fold in the raspberries and blueberries. It is ok if a few of the raspberries break apart.
  8. Use an ice cream scoop to scoop the batter into your muffin pan or baking cups, until each is about ¾ filled.
  9. Bake for 15-18 minutes, or until a toothpick comes out clean.
  10. Cool for 10 minutes in the pan, then transfer to a wire rack to cool.
