Banana Berry Sheet Pan Pancakes

Over the last year, we have gotten into a routine of ordering in bagels from our favorite local spot every Sunday. While they are delicious (if you haven’t had a bagel from Kosher Bagels Supreme in New Jersey you haven’t LIVED), a few weeks ago I wanted something a little different.

I had seen Caitlin from The Mama Notes post about sheet pan pancakes on Instagram Stories a few weeks prior so I decided to give them a shot!

This recipe is so easy and requires only a few ingredients. All you need is some pancake mix, milk, vanilla, eggs, bananas, blueberries and cinnamon sugar. What could be bad about all of that? The kiddos loved them!

Ingredients:

Pancake Mix, 2 cups

Milk, 1 cup

Eggs, 2

Vanilla Extract, 1 teaspoon

Banana, 1, sliced

Blueberries, 1/2 cup

Cinnamon Sugar, to sprinkle the top of the pancakes with before baking

Directions:

  1. Preheat the oven to 425 degrees Fahrenheit. Spray a 10 x 15 jelly roll pan with non stick spray.
  2. In a medium mixing bowl, add the pancake mix, eggs, milk and vanilla extract. Whisk together until the batter is smooth.
  3. Pour the batter into the jelly roll pan and smooth out until it covers the entire pan.
  4. Top with the sliced bananas and blueberries and then sprinkle cinnamon sugar on top.
  5. Bake for 10-12 minutes or until cooked and slightly browned. Cooking times will vary, so keep an eye on them!
  6. Serve with your favorite maple syrup or jam.
