Lemon Butter Gnocchi with Fresh Thyme

Last night, I was wandering the aisles of Trader Joe’s, as one does, looking for inspiration for dinner. When I saw the packaged gnocchi, I knew I had found it! Instead of making gnocchi alla sorrentina (gnocchi with red sauce and cheese), a personal favorite, I decided to make something a little different. I had been wanting to make a butter sauce with lemon for a while. I had a bag full of lemons that were just waiting to be used. Tonight seemed like the night!

The butter sauce is lemony but not overwhelmingly so. The thyme adds a nice punch of herbs and green to the dish. I also LOVED finishing everything off with a little freshly grated cheese. It added a nice nuttiness to the dish. Since this is rather decadent, I didn’t serve a side dish. It wasn’t necessary in my opinion.

This recipe took less than 10 minutes from prep to eat. That is record time in my book! Hope you enjoy it as much as we did!

Ingredients:

Trader Joe’s Gnocchi, 1 package, cook according to directions (you could probably use the frozen Trader Joe’s Cauliflower Gnocchi for this recipe but I used the real stuff)

Butter, 4 tablespoons

Lemon, 2, zested and juiced

Fresh Thyme, 5 sprigs, stripped and roughly chopped

Sea Salt, pinch

Fresh Ground Pepper, pinch

Parmigiano Reggiano or Asiago Cheese, grated, 2 tablespoons

Directions:

  1. Cook the gnocchi according to the directions on the package. They should take no longer than 3-4 minutes.
  2. Melt the butter in a large skillet on medium heat. Once melted, lower the heat to low and add the lemon zest. Stir until fragrant.
  3. Add the thyme, fresh ground pepper and sea salt to the skillet. Once you start to smell the thyme remove the skillet from the heat.
  4. Add the lemon juice to the skillet. Stir until combined.
  5. Add the cooked gnocchi straight to the skillet and mix until all of the gnocchi are covered in the sauce.
  6. Serve in bowls. Grate some fresh cheese over the top of each bowl.
  7. Eat immediately!
