Spicy Mahi Mahi Tacos

I am always looking for quick and easy dinner recipes. I went back to work after my maternity leave two weeks ago, so we have forced ourselves to get a little more organized.

Over the last two weeks, E and I have made a conscious effort to meal plan and shop for the entire week together on Sunday. We decide what we are going to have dinner every night. It has led to a significantly less stressful week, and less food waste, overall. Both very important things!

One of the quickest meals we made last week was these Spicy Mahi Mahi Tacos. The entire meal came together in just under 10 minutes! Scroll down for the recipe.

Ingredients:

Mahi Mahi, 2 filets

Riced Broccoli or Riced Cauliflower, 1/2 bag

Spice Mix (sea salt, fresh ground pepper, smoked paprika, garlic power, onion powder, and a little cayenne pepper)

Trader Joe’s Everything But The Bagel Seasoning

Extra Virgin Olive Oil (“EVOO”)

Salsa

Guacamole

Flour Tortillas

Directions:

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Spread the Riced Broccoli or Riced Cauliflower onto a aluminum foil covered sheet pan. Drizzle with EVOO and then season with about tablespoons of Everything But The Bagel Seasoning. Mix it up with your hands until evenly coated. Bake for 10-15 minutes, or until browned slightly. Keep an eye on this so it doesn’t burn.
  3. Drizzle a little EVOO on both sides of each fish filet. Then coat the fish in the spice mix.
  4. Heat a cast-iron skillet on your stovetop on high. Drizzle in two tablespoons of EVOO. Once the EVOO is shimmering you can add the fish to the skillet.
  5. Pan sear the fish for 2-3 minutes on each side, or until cooked through.
  6. Lay the tortillas flat onto a plate. Once the Riced Broccoli or Riced Cauliflower is done, spoon some onto the tortilla. Then place the cooked fish on top of that. Add some salsa and guacamole on top for an extra punch of flavor.
