The Chef Cub Yogurt Parfait

My brother, David, lovingly referred to in this house as “Uncle Cub” or “Chef Cub,” moved in with us for the month of April. It was SO NICE to have him here. The kiddos LOVED having him around, and we did too! David LOVES to cook and bake and eat. Just like ME! He spoiled us by cooking and baking a couple times a week. He made cinnamon rolls, babka, chocolate chip blondies, homemade pasta, and more! He left New Jersey at the beginning of May to head out to Los Angeles to spend time with my parents and siblings. We miss him HORRIBLY!

One of the things I miss the most is the time we spent most mornings making yogurt parfaits. David eats plain greek yogurt with berries, granola, and a little bit of honey, every morning for breakfast. I have NEVER been a big plain yogurt fan. I am more of a vanilla bean girl myself.

He insisted that I try his yogurt one morning, and I was hooked! I made him assemble me a parfait on the spot! Since David’s departure, I have continued to make myself a yogurt parfait most mornings. They really are delicious and they keep me full longer than a bowl of cereal.

Ingredients:

Plain Nonfat Greek Yogurt

Strawberries, cut up

Blueberries

Blackberries

Raspberries

Honey (we use the Trader Joe’s Mostly Mesquite Honey)

Granola (we use either Trader Joe’s Ancient Grains Granola or Trader Joe’s Peanut Butter Protein Granola)

*I have also added cut up kiwi or a dollop of lemon curd on top – both delicious
